I'm all for the classic "dinner and a movie" gig, but I like to change things up depending on what time of year it is. Like if it's Christmas time, there would be the get-to-know-you dinner and then go check out some neighborhoods that do over-the-top decorations and lights. If it's Halloween, go check out a scare park and have fun. I tend to do last minute planning and it somehow always works out.

Bungee jumping. It's that adrenaline rush that is missing from my life :P Something about taking a dive off of a platform, falling towards the ground and being saved by a giant rubber band just seems like fun to me.
